What began in 2010 with the planting of the first vines by winemaker Marino Moenaert in Oostkamp, grew — with the support of entrepreneur Luc Beke — from a passionate project into a full-fledged 25-hectare winery.
At Domaine De Blauwe Zaal in Bruges, the home of Mérula, tradition and modern winemaking techniques come together in an expression of purity and character.
Founder Marino Moenaert inherited his passion for wine from his grandfather. With a background in horticulture and experience as a teacher, he decided to fully dedicate himself to viticulture.
Together with entrepreneur Luc Beke, who supports the project, Marino has expanded and professionalized the estate. Their joint dedication has resulted in a winery known for its quality and innovation.
Mérula Wines combines traditional viticulture techniques with modern innovations. The grapes are carefully selected and vinified in stainless steel tanks with floating lids and cooling jackets to ensure optimal fermentation. For sparkling wines, the méthode traditionnelle is used, including a second fermentation in the bottle and a 24-month maturation "sur lie."
They produce authentic Bruges wine on a unique terroir of sandy loam and iron sandstone, where the vineyards benefit from the mild influences of the nearby North Sea. Each bottle reflects their respect for nature, craftsmanship, and the environment.
The sparkling wines — Mérula Brut de Bruges Prestige, Mérula Brut de Bruges Tradition, and Mérula Brut de Bruges Rosé — are produced using the méthode traditionnelle. These wines are distinguished by their fine and persistent bubbles, fresh aromas, and delicate taste.
The Brut de Bruges Prestige, one of their flagship cuvées, has received recognition in the Gault & Millau wine guide. With an annual production of approximately 30,000 bottles, Mérula continues to strive for excellence in every bottle.
